Apple Raisin Muffin

I had 3 apples that were turning soft and didn't have the heart to throw them out. After going through my fridge, I found some raisins, ground almond and butter left waiting to be used. Since my eldest daughter's tutor is coming tomorrow, I decided to bake something simple and muffins came into my mind. Searched the internet and found Paula Deen's apple raisin muffin recipe. I made some changes and it come out pretty good.

so glad that you're updating again. i really missed your posts.

btw, i tried your nasi briyani recipe the other day and it came out quite badly. the rice was unevenly cooked with the top half not being cooked. would you know why? did i use a pot that was too small?

Thank you beachlover :-)

anonymous, did you use a rice cooker or regular pot? It's strange that the the top half not cooked. You can try sprinkle more water to the rice when it's cooking. I guess some brand of rice may need more water than other. I hope you are not dissappointed :(
