Dark Chocolate Dessert Cake




My least creative cake that I baked for my colleagues in the office yesterday night :-D  It is a very simple recipe and is taken off the back of a cadbury dark cooking chocolate wrapper.  I would say that not only it is easy, it tastes real good too.   I used dark ghana whittakers chocolate but you can use any good quality dark chocolate for this.  However, I would recommend that you add maybe 2T of sourcream/buttermilk or yogurt for extra moist texture.  

What you need:
Cake
250g butter, chopped
200g dark chocolate, chopped
1T instant coffee powder
1.5C boiling water
1.5C superfine sugar
2 large eggs, lightly beaten
1.5C self-raising flour, sifted
1/2C cocoa powder, sifted
2t vanilla

Chocolate Frosting
150g dark chocolate, chopped
40g butter

What you do:
Cake
1. Preheat oven to 160C or 140C for fan-forced oven
2. Greased and lined 10inch round cake pan
3. Dissolve coffee in boiling water and stir, put aside
4. Melt butter and chocolate in a bowl over a saucepan of simmering water, stir till smooth then add coffee mixture and sugar and stir to dissolve sugar
5. Take bowl off the saucepan and let it cool for 10mins
6. Then using an electric mixer, gradually add vanilla and eggs, then flour and cocoa, mix a further 2min or until evenly combined
7. Pour into cake pan and bake for 45min-1 1/4 hr or till skewer comes out clean
8. Cool in pan for 30mins before turning onto wire rack

Chocolate Frosting
1. Combine chocolate and butter in a bowl over a pan of simmering water, stir to combine
2. Allow to cool slightly before spreading over top of cake
