I am not a great fan of brownies. But I was looking out for a chewy , fudgy brownie for another friend and thought of giving this recipe a try. An online friend shared this recipe a few years ago and it has always been in my to do list but it got shifted down as months passed. Honestly I am glad that made it. It is really that fudgy, chewy and dense, good for those who love fudgy brownies :-)
I highly recommend that you use good quality chocolate which is at least 70% cocoa. Cocoa powder is up to you. I used natural cocoa powder as it has a stronger flavour compared to dutch processed ones. It's your choice :)
What you need:
125g butter
200g good quality dark chocolate (preferably 70% cocoa)
3 eggs
1 ¾ cup caster sugar
1 ½ cup plain flour, sifted
1/3 cup cocoa powder, sifted
1 tsp vanilla
2 cups chopped nuts, toasted (i omit this as my kids don't fancy nuts in brownies)
What you do:
1. Preheat oven to 180 degrees celcius. Lined a shallow 8x11 inch tin with aluminium foil and brush melted butter
2. Place butter and chocolate in a bowl and double-boil the 2 until melted
3. Add sugar, mix well for about 5mins and remove the bowl from pan of simmering water, let it cool for a while
4. Add eggs, one at a time, mixing thoroughly with every addition
5. Add vanilla essence and mix them well
6. Add sifted flour and cocoa powder, gently mix the mixture followed by nuts and stir gently with just a few strokes
7. Pour mixture into baking tin and bake for 20-30mins (just lightly touch the centre, if it is a little soft it is ready as it will firm up once cooled)
8. Allow it to cool in the tin before cutting
