Apam Pisang (Steamed Banana Cake)

I love bananas and I also love apam (steamed cake). Got hold of some overripe bananas and made this for tea. A simple cake and it tastes real good with grated coconut. My youngest daughter loves it.

Ingredients
2 eggs
1/2 cup sugar (I find it a bit sweet, you can cut down a little or use brown sugar)
3 riped banana, mashed
1 cup plain flour, sifted
1/2 tsp soda bicarbonate
1/2 tsp baking powder
pinch of salt

Method
1. Add soda into the mashed banana and mix till well blended
2. Sift flour with baking powder and set aside
3. Beat eggs and sugar till fluffly, add sifted flour mixture and mix till well combined
4. Add mashed banana and a bit of salt and stir slowly to incorporate them into the flour batter 5. Pour batter into a well greased baking pan and steam on high heat for about 45min or till cooked
6. Serve with steamed grated coconut

Hi, i've tried this & its really yummy :) Thanks for this wonderful recipe. But i have a slight problem. Some of the banana in the cakes turn black & it doesn't look nice like yours.. still nice & yellowish. How did you do that? I followed your method exactly. Hope you can help.

I am glad you like it. As to your question, it is actually quite normal for the bananas to turn a bit black. Did you mash the bananas till very fine or you leave it to chunks? Mine didn't have enough bananas, so you don't see it in the picture that clearly. But if you take a close look, you can see some specs of black in the cake.

Ok, forgot to add that to avoid the bananas turning black, prepare all the ingredients first and mash the bananas last.

i didn't mashed it very fine. still able to see a few big chunks. that's what i did too, mash the bananas last but didn't help much. i still don't find any specs of black bananas on your pic. for mine, you can practically see it anywhere & the side of the cake is brown, like baked one :( hmm.. wonder why??

The browning is due to the soda. Alternatively if you don't want the cake to be brown, you can try using self-raising flour instead and omit both the baking powder and baking soda. Don't hv to add anything to the mashed banana. Another way is to totally omit the baking soda and used 1 tsp baking powder.

I've also thought of that. But why do we need to add the soda into the mash banana? why not together with the flour & baking powder? k, will try another time, omitting the baking soda. will let you know the result. thanks so much for answering all my questions :)

Hi delphine,

Glad that it turned out well for you. You can try steaming for about 1hr to 1.5hr around there or till it's cooked.

Hahah I'm a new baker, i didn add enough water to my steamer and ed up I burnt the whole cake .. O well I guess I'll be eating my banana cookies then .. Thanksfor the recipe
